What are Essential Fatty Acids?
The human body cannot function properly without two polyunsaturated fats--linoleic and alpha-linolenic acid. These fatty acids are referred to as "essential fatty acids" because they truly are essential to normal cell structure and body function.
Both essential fatty acids function as components of nerve cells, cell membranes, and hormone-like substances known as prostaglandins. Many of the beneficial effects of a diet rich in plant foods is a result of the low levels of saturated fat and the relatively higher levels of essential fatty acids.
While a diet high in saturated fat has been linked to many chronic diseases, a diet low in saturated fat but high in essential fatty acids prevents these very same diseases.
While it is true North Americans should consume no more than 30 percent of their daily calories as fats, a lack of dietary essential fatty acids probably plays a significant role in the development of many chronic degenerative diseases such as heart disease, cancer, and strokes.
